 THE SNOW SCENE

Welcome to Jackson Hole, Wyoming!
Jackson Hole was originally named Jackson's Hole for Davey Jackson, a mountain man who trapped in this area during the late 1800's. "Hole" was a term used in that day to describe a high mountain valley.

In the winter, Jackson Hole offers world-class skiing and snowboarding at Snow King, Grand Targhee, and one of the country's best, Jackson Hole Mountain Resort. Snowmobiling in Yellowstone, the Gros Ventres, and Togwotee thrills many, too. In the winter, the elk refuge just outside of town fills with near 10,000 elk. However, that's just the tip of the iceberg! All year round Jackson is host to some of the best special events there are. Culture yourself at an art show; watch a ski race; or compete in a fishing competition. Whatever your taste, you'll always find something to suit you.

 OUTDOORS SCENE

Well, time to do some more railroadin'! Ya know I just love riding the rails! Folks, there's an old saying that goes, "all ya see on the Interstate..is Interstate!". Come on, lit's go fer another train ride. Hop aboard!
The Manitou and Pikes Peak Cog Railway!
Since 1891, the Manitou and Pike's Peak Railway (the world's highest cog railroad and the highest railroad in the United States) has taken passengers to the 14,110 foot summit of Pikes Peak. Just 70 miles from downtown Denver and 7 miles from downtown Colorado Springs, the Cog Railway is open from late April through early November, and the trains depart seven days a week. I've been on this ride with my children and I'm here to tell ya, it was one memorable ride. Yer gonna see some of the purttiest terrain and all kinds of wildlife. They have a terrific gift shop and restaurant in the Manitou station. By the way, ya'll better bring along some warm clothes because even in the summer, there's about a 30° drop in temperature at the top! Happy Railroadin' Partners.....have fun and enjoy!!! Starting a Fire:

  • Dryer lint is one of the best. I always carry a little plastic bag full when I hike. Dryer lint will ignite with any spark, flame or reflected light. (You can't find anything lighter or easier to pack.)
  • If warmth is what your after? Longer is better. An elongated fire will heat a larger amount of air at one time than a concentrated circular fire. If you want to keep your hole body warm when your sleeping spread the fire out in a line at least one foot longer than your body (For maximum effect build a reflecting wall and place your bed at its base so that the heat will bounce back at your body. Logs or a dirt mound will work great.)

SPICY STUFFED MUSHROOMS JAMBALAYA : :

    If you're having company over or serving your family a Cajun meal, here's a terrific first course. The stuffing is spicy and flavorful, and no one can stop after eating one. Serves up to 12, but probably more like 6.

  • 1 lb large, fresh mushrooms
  • 2 tbsp butter
  • 1/2 c finely chopped yellow onion
  • 1/2 c finely diced pepperoni
  • 1/4 c finely chopped green pepper
  • 1/4 tsp garlic, pressed
  • 2 c crushed Ritz cracker crumbs
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp chopped parsley
  • 1/2 tsp seasoned salt
  • 1/4 tsp oregano
  • 1/8 tsp pepper
  • 1 c chicken broth

    Preheat oven to 325 degrees. Wash mushrooms and drain; remove stems and chop. Melt butter in a skillet; add onion and saute 5 minutes. Add pepperoni, green pepper, garlic, and mushroom stems. Cook 10 minutes, until tender. Add crumbs, cheese, parsley, salt, oregano, and pepper. Mix well; stir in broth.

    Spoon stuffing into mushroom caps, rounding the tops. Place in a shallow pan with about 1/4 inch water. Bake 25 minutes. Serve immediately.
