God's Wings
An article in National Geographic several years ago provided a penetrating picture of God's wings. After a forest fire in Yellowstone National Park, forest rangers began their trek up a mountain to assess the inferno's damage. One ranger found a bird literally petrified in ashes, perched statuesquely on the ground at the base of a tree. Somewhat sickened by the eerie sight, he knocked over the bird with a stick. When he gently struck it, three tiny chicks scurried from under their dead mother's wings. The loving mother, keenly aware of impending disaster, had carried her offspring to the base of the tree and had gathered them under her wings, instinctively knowing that the toxic smoke would rise. She could have flown to safety but had refused to abandon her babies. Then the blaze had arrived and the heat had scorched her small body, the mother had remained steadfast. Because she had been willing to die, those under the cover of her wings would live.

"He will cover you with his feathers, and under his wings you will find refuge." (Psalm 91:4) Being loved this much should make a difference in your life. Remember the One who loves you, and then be different because of it.

Ridin' the Rails: Secret City Scenic Excursion Train
Oak Ridge, Tennessee
Turn the clock back to yesteryear and return to the heyday of passenger railroading with the Southern Appalachia Railway Museum's Secret City Scenic Excursion Train.

Trains depart from the entrance to the East Tennessee Technology Park (formerly K-25) near Oak Ridge, Tennessee. The train travels through this historic Department of Energy facility where research and development plunged the United States into the Atomic Age. Upon exiting the Park, the train winds along Poplar Creek and Highway 327 in the beautiful hills and valleys of East Tennessee. Additional route and facility history is available.

Each round trip travels approximately 13 miles and lasts one hour and thirty minutes. Trains are pulled by 1950's vintage Alco diesel locomotives. Seating is in an air-conditioned coach and a dining car, both restored from the 1940's era of passenger railroading. An open-air concession car has souvenirs and snacks for sale. Ticket prices are $10 for adults and $7.50 for children. Advance reservations for all seats are highly recommended. Tickets will be sold the day of each trip if space is available.

Monterey, Tennessee: The Cumberland Mountain Hunting Lodge is located in the scenic Cumberland Mountains of Tennessee, and offers the best in trophy hunting. SKI TOWN USA NORDIC COMBINED WORLD CUP
Steamboat is proud to host the Ski Town USA Nordic Combined World Cup, December 16-18, 2001, for the eighth consecutive year. Nordic Combined has been called the decathlon of skiing because it requires a skier to use two totally opposite muscle groups - explosiveness and strength for takeoff in jumping, then swiftness and endurance for cross-country. The action kicks off on December 16 with an individual event consisting of jumping on the 70-meter/K88 jump hill and a 7.5K individual cross-country sprint. On Tuesday, December 18, the competition moves to the 90-meter/K112 "big hill" with the 15K cross-country race. Both the jumping and cross-country portions of the Ski Town USA Nordic Combined World Cup events will be held at historic Howelsen Hill, located in downtown Steamboat Springs. This ski area, which dates back to the early 1900s and has helped produce so many Olympic athletes, earned Steamboat its name of Ski Town USA. Operated by the City of Steamboat Springs, it's the oldest continuous operating ski area in Colorado and the birthplace of Nordic jumping in Northwest Colorado.

Survival Tip: Drink Plenty Of Water For Warmth
Dehydration can occur just as readily during winter outdoor activities as in the summer. One reason is that the body loses more water vapor breathing in the cold dry air. The effects of dehydration will make you colder, will slow digestion (making less nutrients available for energy production), and can eventually lead to hypothermia. The story goes that some time ago, a man punished his 5-year-old daughter for wasting a roll of expensive gold wrapping paper. Money was tight and he became even more upset when the child pasted the gold paper so as to decorate a box to put under the Christmas tree.

Nevertheless, the little girl brought the gift box to her father the next morning and said, "This is for you, Daddy." The father was embarrassed by his earlier overreaction, but his anger flared again when he found the box was empty. He spoke to her in a harsh manner, "Don't you know, young lady, when you give someone a present there's supposed to be something inside the package? The little girl looked up at him with tears in her eyes and said, "Oh,Daddy, it's not empty. I blew kisses into it until it was full." The father was crushed. He fell on his knees and put his arms around his little girl, and he begged her to forgive him for his unnecessary anger.

An accident took the life of the child only a short time later and it is told that the father kept that gold box by his bed for all the years of his life. And whenever he was discouraged or faced difficult problems he would open the box and take out an imaginary kiss and remember the love of the child who had put it there. In a very real sense, each of us as human beings have been given a golden box filled with unconditional love and kisses from our children, family, friends and God. There is no more precious possession anyone could hold. You now have two choices ... you can:

Get a cheerful night light to illuminate corners where shadows lurk. Post a funny sign on the closet door that says, "No monsters allowed!" And try not to expose your toddler to scary TV shows, movies, or books, as these will only exacerbate bedtime fears. Next, establish a bedtime routine and stick to it, leaving plenty of time for a bath, a story, and some quiet cuddling before lights-out. To help your toddler go to sleep feeling calm, try to keep evenings as peaceful as possible (now is not the time to hash out a contentious issue with your mate, for instance).

Can you leave heavily spiced food out longer?
Many spices, or their active chemical ingredients, can kill bacteria or inhibit their growth. Four common flavorings - onion, garlic, oregano, and allspice - killed or inhibited every one of up to 29 common food-borne bacteria for which they were tested.

Broiled Trout Mediterranean:

  • 6 - 8 trout fillets
  • 2/3 cup olive oil
  • 1/2 cup white wine
  • 1/3 cup butter, melted
  • 1 Tbsp. oregano
  • 1/3 cup fresh parsley, chopped
  • 1 small onion, chopped
  • 2 Tbsp. lemon juice
  • 4 cloves garlic, minced
  • 1 tsp. Worcestershire sauce
Spray a large baking dish with non-stick cooking spray. Combine remaining ingredients, except trout and mix well. Pour over trout and broil until golden brown and flaky. You may use another fish besides trout if you prefer; such as halibut, orange roughy or flounder.

German Chocolate Pie:

  • 2 large eggs
  • 3/4 cup sugar
  • 1/4 cup flour
  • 8 oz. bar German Chocolate
  • 2/3 cup butter
  • 1 tsp. vanilla
  • 1/2 cup pecans, chopped
  • Flaked coconut
Beat eggs and sugar together; add flour and continue beating. Melt chocolate and butter together and allow to cool. Add chocolate mixture to egg mixture and mix well. Add vanilla and pecans and stir. Pour into a greased 9-inch pie plate. Sprinkle with coconut and bake for 35 minutes at 350 degrees.
